What was the first well made cocktail you recall loving?

It was a Sidecar at the Ritz in Paris. Made with Remy Martin XO, Vintage Cointreau and fresh lemon juice from a small lemon tree on the property.


If I could make a drink for anyone in the world it would be?

Ernest Hemingway, he is the legend that has inspired me for a lifetime. To make him a truly unique cocktail that he would love would be my ultimate challenge as a bartender.


Describe the drink you want to make for yourself, with the dream ingredients you’d love to be able to make it with?

I have made it, and I dream about it still. It was an Old Fashioned made with Louis XIII Black Pearl, Rollingdale 100 point Pinot Gris Ice Wine, and a vintage 1941 bottle of Angostura. The best Cognac Old Fashioned I have ever had.

I do what I love and don’t fear fighting for it

If you had a t-shirt bearing your Bartending philosophy on it, what would it say?

My other job is, “Get the fuck out of here” 

If you could go anywhere in the world and order a drink, where would it be and what would you have?

 Casablanca, Morocco. I’d have the Maghrebi traditional Green tea, with mint, poured with style.

Do you have a Bartending pet peeve?

Unpolished glassware and unkept back bars. These are displays for your craft, not afterthoughts.
