4 am Sour is for the late night workers…
This creation came after working a busy saturday night at the bar. I didn’t get home until 4am, so I decided to make myself a rum sour. The cocoa simple syrup came from a previous competition and the cinnamon on top created an amazing aromatic experience.
2 Parts Appleton Estate Reserve rum
1 Part cocoa simple syrup *
4 dashes Bittered Sling plum & rootbeer bitters
1 organic egg white
juice of half a lemon
Combine all the ingredients in a tin and dry shake, add ice and shake, double strain. Garnish with cinnamon.
*Cacao simple syrup
2 cups water
3 cups water
1 Tbsp cocoa
1 tsp ground cinnamon
1/2 tsp whole cloves
1 tsp mexican vanilla
