Sochu Collins, the classic with a veggie substitute.

2 Parts White Dragon Shochu

1/2 part lemon juice

1/2 part honey syrup 1:1

3-4 fresh basil leaves

2 dashes grapefruit bitters

top with ginger beer 

Combine all the ingredients, except ginger beer, in a boston shaker and shake with ice. Single strain into collin’s glass with ice. Top with ginger beer.
