Pink Lady Redone

1 & 1/2 oz Hayman’s Old Tom Gin

1/2 oz Luxardo Maraschino 

1 Barspoon Campari

1 Egg White

1/2 Barspoon Fine Raw Sugar

3/4 oz Fresh Lemon juice

1/4 Pink Lady Apple Chopped

Add Apple and sugar into tin and muddle well. Add lemon juice, egg white, Liqueur, Gin and Campari. Dry Shake (without ice) for 30 seconds, add ice and wet shake till chilled and creamy. Double strain into chille coupe and garnish with fresh cherry.
