4 parts Belvedere Citrus
3 parts fresh lemon juice
2 parts 1:1 honey water
1/2 free range egg white
1 part beet root reduction (6 beets, 2 cups of honey 6 cups of water and 2 whole lemon rinds, reduce by half, purée and fortify with vodka 1:4 dilution
Add ingredients to shaker, shake vigorously and single strain into small Collins glass. Garnish with candied lemon rind from the beets.
