“Maraschino Sour Gel”

Sour Layer:
4 parts fresh lemon juice
4 parts lemon infused Banff Ice
2 parts Agave nectar
Gelatin (amount varies with agar agar or Knox, and depending how long you have)

Maraschino Layer:
4 parts Luxardo Maraschino
2 parts water
2 parts House Cherry Brandy
Dash rose water.

Mix sour layer, allow to rest 5-7 mins, add to oiled baking sheet, allow to set 2 hours, follow with cherry layer. Rest overnight for best results.(consider 3-4 layers)
