“Lavender Fizz”

3 parts Victoria Gin
5 dashes of Bittermens Hopped Grapefruit bitters
1 part honey syrup
1 part lemon juice
1 egg white
3 parts soda
2 lavender sprigs (one for garnish)

Remove petals from one lavender sprig and place in a mixing glass. Add gin, egg white, bitters, honey and lemon; dry shake, shake again with ice slowly as to aerate the mixture. Fine strain on fresh rocks into a collins glass and slowly top with soda.  Garnish with fresh lavender sprig.
