2 parts Hendricks gin
1 part sour apple shrub
3 healthy dashes house made earl grey bitters
2 fresh sprigs of lavender (one for garnish)
3 parts Fentiman’s ginger beer
Combine all ingredients, excluding ginger beer, in a mixing glass. Shake vigorously with ice, and fine strain into small beaker (or old-fashioned glass) with fresh ice; top ginger beer. Garnish with lavender sprig.
